Official Name: Amaranthus gangeticus

General description:Edible Amaranth grows very well in warm climates. This fast-growing vegetable can be harvested 30 days after sowing, by the cut-and-grow-again method. Seeds are very small and will germinate best at temperature above 65 F under dark conditions. Thin plants during the growth if necessary and thinnings can be eaten. Edible young leaves and stems are cooked like spinach. The amaranth family has many groups of plants found in various regions in the world. The following varieties are the most popular leafy amaranths grown in Asia. Soft texture and tender leaves are excellent for stir-fry and soup. Amaranth plants can reach heights of over 2 meters tall with fleshy oval shaped leaves that are sometimes pointed at the tips. Some varieties have a deep maroon center of the leaf with streaks of red, purple and green. The Red variety produces feathery purple, magenta or red flowers from the central stalk which is packed with edible seeds. Though the flower buds are edible, once they mature and become bushy they are not palatable and should be avoided. The young leaves are slightly astringent when raw, but are nutty and mild, like spinach. Larger, more mature leaves are best for stewing or braising, similarly to a chard or beet green.

How to grow: When you’re ready to plant amaranthus , choose a sunny location for it. This fast-growing plant needs at least six to eight hours of sunlight daily to perform well. Amend poor soils well with compost, manure or peat moss. Amaranthus cruentus needs moderately fertile, but consistently moist soil, and grows best with a soil pH between 6.5 and 7.5. Amend acidic soils with lime, or alkaline soils with sulfur, to adjust the soil pH. In dry conditions, water it two or three times weekly, or as needed to keep the soil moist 1 inch beneath the surface. Fertilize amaranthus after planting and every six weeks with 2 tablespoons of granular 10-10-10 fertilizer per plant. Spread the fertilizer on the soil 6 inches from the plant and till it in lightly.
