Official Name :Apium graveolens var. secalinum

General Description: Chinese celery, or khan choy (中国芹菜), is the same species as the European variety most people in the West are familiar with, Apium graveolens, but it has a number of important differences. Chinese celery has much thinner stalks and a stronger taste than its European relative. It can range in color from white to dark green. Chinese celery is rarely served raw, but is a common ingredient in cooked Chinese and Vietnamese dishes.

The thin stalks of Chinese celery are hollow and crispy, and both the stalks and the leaves may be added to cooked dishes. The seeds of the plant are also used in cuisine and in traditional Chinese medicine. Chinese celery can be used dried as well as fresh to add flavor to food.

How to grow: Because a celery plant has such a long maturity time, unless you live in a location with long growing seasons, you need to start celery seeds indoors at least eight to 10 weeks before the last frost date for your area.

Try mixing them with sand and then sprinkle the sand-seed mix over the potting soil. Cover the seeds with just a little bit of soil. Celery seeds like to be planted shallowly. Once the celery seeds have sprouted and are large enough, either thin the seedlings or prick them out to their own pots:

Benefits: Celery contains antioxidants help neutralize free radicals and prevent them from causing damage that may otherwise lead to disease development. A stick of celery also provides small amounts of vitamin K, folate, vitamin A, potassium, and vitamin C
